(Ocimum basilicum)

A very popular, sweeter pesto type Basil with medium green fragrant leaves that are larger than the size of the typical basil variety, perfect for tomato dishes, soups and pasta dishes.  Chefs enjoy the sweeter, not-so-clove-like flavor while homeowners appreciate its natural pest repelling qualities, which deter aphids, tomato hornworms, and mites.  Plant in full sun in well-draining average garden soil and harvest frequently to discourage flower formation.  Be sure to supply plenty of water to keep the soil consistently moist but not water-logged.  Pair with tomatoes, beets and asparagus to increase their yields.  Basil should be considered an annual and replaced each year.  To keep the plants producing all year long, cut stems back to the second set of leaves each time there is more than 8 sets of leaves on the plant itself.

Harvesting:  Simply pinch tips off.   Use immediately or freeze entire stems with leaves still attached.  Leaves can also be dried for seasoning; store in a cool dry cabinet.
